  4. So what made you decide to cut out gluten? UC doesn't require a GF diet.

    Thank you for your inquiry. I cut out gluten because I did a lot of research, and found that many people with UC and Crohn's do well with a GF diet. I figured I had nothing to lose, and decided to try it. I found my symptoms significantly improved. With the removal of all grain on the SCD, I was actually able to heal myself of my UC flare.

    With regards to your comment to Jess Scone on her review of some of our products....

    The Vege USA Vegetarian Plus brand is NOT gluten free. So I would not recommend them to you because we do not want you to have a reaction.

    However, these products look, taste and feel like the protein they are substituting.

  7. do you eat the Paleo and SCD diet as well as the vegan and gluten free? I'm confused. Just found your blog and I am really dumbfounded that you are able to do all these diets! I am barely able to do the gluten free, dairy free (mostly), low fodmap diet! Am interested in reading about your meal choices.

    1. Hello! Thank you for your questions. I know, it can be a bit confusing. I follow the vegan version of the Specific Carb Diet. The SCD is a gluten free diet, and a slightly more restrictive version of the Paleo diet. The SCD shares many similarities with the Body Ecology Diet, which I did at one point follow, so the recipes that do fall under that category, I label as both. I follow the vegan version of the scd, however I do eat pastured farm egg whites. (I'm allergic to the yolks). I hope that clears things up for you. Everything is gluten free--as the scd, bed and paleo diets are all free from gluten. .
